My All Time Go To Easy Comforting Meal
I had just had a newborn a few months prior. As new mother’s are I was exausted so of course cooking was a survival at the time. A sweet family brought over this pot of red lentil coconut curry with rice and a salad. DELICIOUS!
This meal was so comforting and nourishing for my family. I asked for the recipe and since then have changed it a bit to make it even easier for a busy mama, while still maintaining the delicious red lentil coconut curry flavours.
This recipe not only is so easy to throw together!! It is my all time favourite go to paired with some of my delightful sourdough crackers recipe.
I love serving this meal when hosting other families. I’ve had mom’s ask for this recipe because all their kids loved it – just what any mama needs right?! So here you go, now you have the best easy, nourishing, creamy and delicious red lentil curry recipe too!
Ingredients: Vegan Red Lentil Curry
- 3 cups red lentils
- 1 large onion
- 2 tsp granulated garlic (or 1 head of garlic)
- 1/4 tsp ginger powder (or 1 Tbsp fresh ginger)
- 1 tsp turmeric powder
- 1 Tbsp curry powder
- 6 cups vegetable broth
- 1 – 1 Quart jar diced tomatoes
- 1 can of coconut milk
- 4 large handfuls of fresh or frozen greens
- 2 tsp of salt

Red Lentils A powerhouse of nutrition
I love how quickly red lentils cook up. But even better is how packed full of nutrition they are!
Did you know that when you combine red lentils with a whole grain (brown rice), lentils provide the same quality protein as meat! Crazy right?! Lentils are such a great source of protein. Simply a ½ cup serving of cooked lentils will give you about 12 grams of protein.
Lentils are high in fibre, perfect for good gut health and overall health. They also are a great source of manganese, which helps protect your body against free radicals along with maintaining a normal blood sugar level.
What’s also amazing about red lentils is that they are super high in folate and quite high in iron. When looking at all plant-based foods, lentils contain the most folate. A 1/2 cup of cooked red lentils provides 15% of your daily iron as well as folate needs!
This is why red lentils are my favourite for pregnant or nursing mamas!
From Scratch Instructions: How to make creamy vegan red lentil curry
Chop the onion, grate the ginger and mince the garlic. Mom hack, the finer the better so the kiddos don’t pick them out.
In a large pot sauté the onion, (garlic & ginger too if using fresh) in a few tablespoons of water until the onions are almost cooked.
Add the vegetable broth to the pot along with the red lentils, seasonings, and diced tomatoes.
Bring to a simmer and cook for about 15 minutes until the lentils are cooked.
Next stir in the fresh or frozen greens, to let them wilt or thaw.
Finally, add in the salt and coconut milk and mix.

Variations of Red Lentil Curry
Add some veggies: We like to add cauliflower or sweet potato for added flavour and nutrition.
Mix up the greens: Our favourite is spinach, swish chard or kale from out garden fresh or frozen. You can even use lambs quarters, however the flavour isn’t quite as nice.

What do you serve with Red Lentil Curry?
We love to serve this creamy red lentil coconut curry on top of some brown rice.
And often my quick & easy spelt sourdough discard crackers or sourdough bread topped with our favourite raw garlic spread is a mouthwatering combination!
Sometimes I enjoy adding a fresh garden salad as a side. Though if I don’t have time, I don’t stress for I know my family is getting greens in the red lentil curry anyways.
What if I don’t have enough vegetable broth to make this recipe?
If this happens to me I simply add some more of the herbs, onion and garlic for added flavour.

Creamy Vegan Red Lentil Curry
The easiest, nutritious & comforting creamy lentil coconut curry you'll ever make! Through this delicious meal together in no time.
Ingredients
- 3 cups red lentils
- 1 large onion, diced
- 2 tsp garlic powder (or 1 head of garlic, minced)
- 1/4 tsp ginger powder (or 1 Tbsp fresh ginger, grated)
- 1 tsp turmeric powder
- 1 Tbsp curry powder
- 6 cups vegetable broth
- 1 - 1 Quart jar diced tomatoes
- 1 - 400ml can of coconut milk
- 4 large handfuls of fresh or frozen greens
- 2 tsp of salt
Instructions
- Chop the onion.
- If using fresh, grate the ginger and mince the garlic. If using powder/granules add later.
- In a large pot sauté the onion, (garlic & ginger too if using fresh) in a few tablespoons of water until the onions are almost cooked.
- Add the vegetable broth to the pot along with the red lentils, turmeric, curry powder, (onion and garlic powder if not using fresh) and diced tomatoes.
- Bring to a simmer and cook for about 15 minutes or until the lentils are cooked.
- Next stir in the fresh or frozen greens, to let them wilt or thaw.
- Finally, add in the salt & coconut milk, mix thoroughly.
Notes
- Mom hack, finely chop the onions so your kiddos won't pick them out.
- Adding the salt at the end will help the lentils to cook faster.
- Serve on top of brown rice.
